#JeremySays – Staying Home tip!

Since most of us are stuck at home, it may be beneficial to look in those dark areas of y our cupboards for brewing ingredients. Any extra random grains, sugars, or spices that you have lying around can be used as an adjunct, or flavoring in your beers. It’s easy to imagine how these flavors will play out, just like if you were using them out of a cookbook. If you are using a raw grain, you should do a cereal mash after crush, where you raise the temp to at least 190F. for 30 min to gelatinize the starch before it’s added to the main mash for conversion. Remember that the most sugars will boost alcohol and dry your beer out, but at the same time give you the perception of sweetness. I remember one of my first brews was a 10% old peculiar ale brewed with maple syrup, brown sugar and spices. It sounds sweet and cloying but it was boozy, complex, and strong enough to make you forget what’s going on in the world. 🙂
