Oxygen is beer’s worst enemy post-fermentation. It turns all those precious flavors you worked so hard to get in your beer to stale cardboard! If you’re serious about making good beer you should buy a couple of corny kegs, a kegerator, and a co2 tank with a regulator. This way you can clean, sanitize and purge all of the oxygen out of the keg before you rack your 5 gals in! You’re going to pick up way less oxygen in a bulk container than bottling two cases of bottles. If you can’t afford kegs, don’t have space, or prefer to bottle, you can buy the Blichmann beer gun that allows for a co2 purge before you fill the bottles with beer!
